The processing is the same as the Scoppolato Grand Cru. The only difference is the ageing period. Once the cheese is perfectly aged, is wrapped in straw and hay. The warmth of hay and the aromatic notes of straw, enhance the fragrances and aromas.
Afterwards, we will have an elegant cheese, with complex scents and a pleasant sapidity that enhances the milk flavour. To preserve its aromas, we sell the "Scoppolato Paglia e Fieno" covered in a net to let the straw and hay to stay in contact with the crust of the cheese. Differently than Scoppolato Grand Cru, the Paglia e Fieno must be cut traditionally into slices.
