The Scoppolato Foglie di Noce (walnut leaves) is another excellence of the Scoppolato family. The sweetness and elegance of Scoppolato emphasize with walnut leaves. A long and constant process in which the cheese ages for at least 60 days.
Then, The Scoppolato is stored in oak barriques and wrapped in walnut leaves. In this microclimate, the walnut leaves release their essential oil that goes to seep in, without being too strong, inside the cheese creating aromas and scents that enhance the Scoppolato until it becomes an intriguing and very complex product.
